Traditional variety from the Montes de Toledo, organically grown at an altitude of 800 m.
High content of phenolic compounds.
This oil is selected at its peak of ripeness to achieve richer aromas and a balance between bitterness and spiciness, with notes of vegetables, artichokes, green peppers, and banana peel. On the palate, it has a medium-high bitterness and a progressive spiciness similar to green pepper.
Recommended for palates seeking an exceptional taste and gastronomic experience. Ideal for raw recipes such as ceviches and carpaccios.
Perfect for creating emulsions with character, providing a unique culinary flavor and a smooth texture, like the pure juice of EVOO. Suitable for fatty fish such as bluefin tuna and salmon, and meats such as suckling lamb, kid, or Iberian suckling pig.

Living Nature
The Dehesa El Molinillo olive grove is lost beyond the eye. Thousands of centuries have passed over this land, which today houses countless centuries-old olive trees, always cared for with the utmost respect. An organic cultivation in which each tree, each olive, and the fruit extracted from it (pure natural juice) are treated with absolute veneration. To achieve this, we need only look back and produce it as it has always been done: allowing each olive tree to express itself with complete freedom.
