The olive is harvested when it is beginning to ripen.
The combination of Green and ripe aromas allow great versatility both in cooking and in table. The bitterness and spiciness are medium.
It's ideal for enhancing other dishes such as fine seafood, artisan bread, or seasonal vegetables like artichokes or potatoes, as well as for saturating firm, fleshy tomatoes.
It can be used in cold, warm, or hot recipes, as a starting point for a stir-fry, or as a finishing seasoning for a mash, marinade, grilled meat, or quick stir-fry. It can also be used when high temperatures are required, such as in woks and when grilling meat or fish.

Living Nature
The Dehesa El Molinillo olive grove is lost beyond the eye. Thousands of centuries have passed over this land, which today houses countless centuries-old olive trees, always cared for with the utmost respect. An organic cultivation in which each tree, each olive, and the fruit extracted from it (pure natural juice) are treated with absolute veneration. To achieve this, we need only look back and produce it as it has always been done: allowing each olive tree to express itself with complete freedom.
